Buttery Mango Pancakes with Sweet Mango Syrup

These were every bit delicious 😋
Soft and fluffy pancakes served with mango syrup made from fresh organic mangoes plucked from the mango tree in my backyard.


Mangoes are in season here in Nigeria and I just had a very strong intuition that making pancakes with mangoes would be so divine. So I came up with this recipe and it has become one of my favourite pancake recipes so far. You can tweak the recipe to your taste, if vegan. Here's the recipe.

Mango Pancakes Recipe

3 Very Ripe Mangoes
1 tbsp of butter / margarine
2 tbsp of powdered milk / plant-based milk
2 Cups of Flour
2 Eggs
1/2 Cup Sugar
A tsp of Salt
1 tbsp of Baking powder
Water as needed

Mix all dry ingredients together in a bowl. Add the butter or margarine, eggs & pureed mangoes then add water until it becomes a droopy consistency. Heat up a frying pan or skillet, add a dab of butter or oil, cook each pancake for 2-3 minutes on each side till golden brown.

Sweet Mango Syrup Recipe

1cup of water
1 cup of Sugar
1/2 cup of pureed mangoes

Combine all the ingredients together. Bring to a boil until it becomes syrupy. .
.
Garnish pancakes with chopped mangoes and drizzle the sweet mango syrup on it. Dig in and enjoy!
